Ingredients

  • 1 ½ oz Banks 5 Island Rum
  • ¼ oz Cointreau
  • 1 oz pandan and oat orgeat
  • ¾ oz lime juice
  • 4 dashes ginger bitters

Pandan and oat orgeat

  • 500 g oat milk
  • 500 g white sugar
  • 25 g pandan leaves, chopped
  • 5 g lime leaves

Method

Pandan and oat orgeat

  1. Mix together the oat milk, sugar and pandan leaves in a sauce pot and bring to a simmer.
  2. Simmer on low for 1 minute and remove from heat. Cover and let sit for 10 minutes.
  3. Using an immersion blender, blend the cooked mixture while adding the lime leaves to the slightly cooled mixture.
  4. Strain through a fine sieve and leave in the refrigerator.

Minor Swing

  1. Add all ingredients to a shaker tin and shake dry.
  2. Pour over pebble ice. Garnish with a freshly bruised lime leaf and candied ginger.
