A crowd-pleasing backyard cocktail from The Gaslight to savour those last hot summer days and nights.


2 oz Baron Samedi Spiced Rum
0.75 oz salted pineapple syrup*
0.75 oz fresh squeezed lime juice

*Salted pineapple syrup is made by coring a pineapple, cutting it into chunks, and letting it sit overnight with 4 cups of sugar, 2 cups of water, and 4 tablespoons of kosher salt. Strain and serve.


- Brûléed pineapple slice (to brûlée the pineapple slice use a handheld kitchen torch and brûlée until golden brown. Alternatively, you can grill the pineapple slice for one minute on each side).
- Pineapple leaf


Add all ingredients together in a cocktail shaker with ice. Mix for 30 seconds and strain into a cocktail glass and garnish.
