Make This: Levetto's Bacon Carbonara

Lean in, Italian joint Levetto is letting us in on their recipe for the perfect carbonara

If you’ve ever been to fast-casual Italian chain Levetto, then you’ll know this: executive chef Shahir Massoud’s passion for Italian food is strong. He labours over each dish that gets served out of the kitchen in the chain’s Toronto location and he wants to ensure his customers not only taste each dish, but truly experience it. Lucky for us (and you), Chef Shahir has decided to let us in on one of Levetto’s top selling recipes so that you can recreate the experience at home.

Ingredients:

  • 75g bacon or pancetta
  • 1/4 of a scallion, thinly sliced
  • 1 tbsp cracked black pepper
  • Sprinkle of salt
  • 1 egg
  • 10g grana padano
  • 8 ounces fresh pasta

Method:

In a pan, toast black pepper until fragrant, render bacon until crispy, add salt, and toss in scallion just to coat. 

In salted, boiling water cook pasta until al dente. Add pasta to pan with bacon along with a splash of the starchy cooking water. Off the heat, toss in the egg to create create a creamy sauce.

Top with grana padano or parmigiano and more scallion.
