Make This: Mount Gay's Bridgetown Sour

The oldest rum distillery in the world transports us to island time with this cocktail using their Black Barrel rum

The Bajan's love for rum runs deep and this Bridgetown Sour cocktail using legendary Bajan export Mount Gay's Black Barrel rum (named not for its colour but after the charred interior of the barrels the rum is matured in) hits you with a solid dose of the island's flavour. While the cocktail is relatively complex both in its preparation and palette, it's the perfect recipe to bust out to impress your guests. And if it doesn't? Get new friends.

Ingredients

  • 1.5oz Mount Gay Black Barrel rum
  • 0.75oz Cointreau
  • 2oz pineapple juice
  • 0.5oz lemon juice
  • 0.5oz mauby bark syrup
  • 0.5oz cinnamon clove syrup
  • 1 egg white
  • 2 dashes vanilla red chili bitters

Method

Add all ingredients to a cocktail shaker, then fill with ice. Shake vigorously for 30 seconds to help emulsify the egg whites. Strain out the ice from the shaker and re-shake with no ice for 30 more seconds to provide extra froth from the egg whites Add some ice to a rocks glass and double strain cocktail into that glass. Top with some fresh grated nutmeg and black pepper and a pineapple spear.
