Make This: The County General's Pimm's Cup

Josh Prout, bar manager at The County General, knows a summer cocktail when he sees it and it doesn't get any more iconic than the Pimm's Cup. A staple at BBQs, picnics and just about any other social event in the UK, the Pimm's Cup is growing in popularity across the world thanks to its refreshing taste and drink-ability. The best part: you can add in whatever seasonal garnishes you like to give it your own unique touch. Here Prout keeps the garnishes simple and adds his own flare via lavender bitters and ginger beer:

Ingredients

  • 0.75oz Boodles Gin
  • 0.75oz Pimms
  • 0.25oz Lemon juice
  • 0.25oz Simple syrup
  • 5 dashes Lavender bitters
  • Ginger beer
  • Cucumber
  • Lemon

Method

Build all ingredients in a glass over ice, stir and top with ginger beer. Garnish with a slice of cucumber and lemon.
