We wanted to use brandy as it is one of the best spirits to use during winter – it gives the feeling of warmth and fuzziness. We haven’t tried it heated up, but we’re confident you could serve this drink hot.”

Ingredients

  • 2 oz St-Rémy VSOP Brandy
  • 1 ½ oz apricot nectar (3:1 dilution)
  • ¾ oz lemon juice
  • ⅔ oz allspice syrup
  • 1 dash orange bitters
  • 1 dash Angostura bitters

Allspice Syrup Ingredients

  • 300 g water
  • 300 g sugar
  • 10 g coarsely ground allspice (toasted first)

Method

Allspice Syrup Method

  1. Heat the water, sugar and allspice in a pot until sugar dissolves, making sure it doesn’t boil.
  2. Take off the heat and cover, letting it sit for 30 minutes.
  3. Strain through a coffee filter.

The Last Leaf Method

  1. Add all ingredients into a shaker with ice. Shake.
  2. Strain into a coupe glass.
  3. Garnish with a dehydrated lemon wheel and serve neat.
