Last week, we headed down to the Distillery District for a tasting dinner at Madrina, the neighbourhood's newest food spot. The Spanish restaurant, helmed by top chef Ramon Simarro, paired Castano wines with an incredible selection of tapas for a group of lucky Foodism readers. Third-generation winemaker, Daniel Castano, was on hand to walk us through the signature wines that matched each course.
We kick-started the evening with a Castano Tintito cocktail – a red wine cooler with lemon foam – which was paired with delicious hors-d'oeuvres like Marcona almonds with nori seaweed, shichimi pepper and sesame seeds, and 48-month cured Iberico ham. Next, we moved on to a Castano Macabeo Chardonnay, which complemented the fresh flavours of the El Bulli olives, oysters with green gazpacho and Atún Rojo Con Ajoblanco; a citrus and pepper marinated yellowfin tuna. Castano Hecula was paired with grilled octopus while the Castano Alcaria went perfectly with foie gras macarons. The Castano Coleccion finished things off nicely with rice pudding fritters and a manchego cheesecake.
