Opened last summer in the former Weslodge space on King West, Pink Sky is a seafood lover's dream come true. The sea-to-fork restaurant features a menu of excellent seafood classics, including this ooey gooey lobster mac and cheese. While we love dining in the port-warehouse-but-make-it-sexy atmosphere, we also love being able to chow down on this lobster mac and cheese in our jammies.

Whether you serve it as a main course or a side dish, this lobster mac and cheese recipe is sure to steal the show. Wow guests or just cozy up with a heaping bowl all to yourself — we won't tell. 

Ingredients

  • 130 g rigatoni
  • 3 g kosher salt
  • 1 g black pepper
  • 10 g Parmigiano Reggiano
  • 45 g cheese curds 
  • 25 g diced jalapeño
  • 50 g shredded mozzarella
  • 30 g mascarpone
  • 35 g fried bread crumbs
  • 70 g steamed lobster
  • 5 g fresh truffle
  • 100 g cheese sauce

Cheese sauce

  • 28 g butter
  • 12.5 g all-purpose flour
  • 53 g cheddar cheese
  • 40 g shredded mozzerella
  • 2 g onion powder
  • 2 g garlic powder
  • ½ g ground black pepper
  • 60 g cream cheese 
  • 160 ml cream (35%)
  • 85 ml milk (3.25%)
  • ½ g cayenne pepper
  • 2 g kosher salt

Method

Cheese Sauce

  1. Place a pot over medium heat. To make the roux, add butter and allow to melt, do not brown.
  2. Once the butter is melted, add all-purpose flour and continuously mix to incorporate the two ingredients. Cook for about 5 minutes, stirring continuously.
  3. Slowly incorporate the milk and cream in small batches whilst continuously stirring. Once the milk and cream are fully incorporated, add onion powder, garlic powder, black pepper, cayenne pepper and kosher salt, and stir.
  4. Add the shredded mozzarella, cheddar cheese and cream cheese, and stir vigorously to fully melt cheeses. Taste for seasoning, and your cheese sauce is now ready.

Lobster Mac and Cheese

  1. Preheat oven to 450 F. Bring 5 L salted water to a boil (it should taste like sea water).
  2. While the water is boiling, place a pan over low-medium heat. Once the water is boiling, drop in the pasta.
  3. While the pasta is cooking, add cheese sauce, mascarpone, diced jalapeño, kosher salt and black pepper to the pan. Slowly mix and incorporate all ingredients.
  4. Cook the pasta 1 minute less than directions specify, then strain and add to the pan.
  5. Turn off the heat and add the shredded mozzarella, cheese curds and steamed lobster, and thoroughly mix everything until the cheese just starts to melt.
  6. Transfer to a small cast iron pan or similar oven safe vessel. Add Parmigiano Reggiano on top and place in the oven until sides are bubbling and the top is golden brown, about 12 minutes.
  7. Remove from the oven, cover with bread crumbs and shave fresh truffle on top. Enjoy!
