RC Show is back for another year at the Enercare Centre, and we’re not sure whether we’re most excited for the eight live culinary and bar competitions; the workshop on baijiu, China's signature spirit; or the endless tastings and demos at Canada’s leading hospitality and foodservice trade event this April 7–9.

Luckily, we don’t have to choose because registration for tickets is now open for the three-day celebration packed full to the rafters with inspirational and educational talks, programming and networking events. Expect to see some of the restaurant scene’s biggest names gracing the stage, like chef José Andrés of World Central Kitchen, chef Tuệ Nguyễn (@TwayDaBae), chef Eva Chin and bar luminaries Evelyn Chick and Christina Veira.

This year marks the 80th anniversary of RC Show, and in honour of this milestone, its ‘Fuel’ theme is every bit as momentous. The foodservice event will bring together the best in the industry to honour the past, embrace the present and fuel the future. In anticipation, here are three events you won’t want to miss:

Fireside chat with Chef José Andrés

Monday, April 7 — 3–4 p.m. | Speaker Stage

Restaurants Canada and High Liner Foods have proudly partnered to present chef José Andrés as the headliner and culinary stage keynote. The globally celebrated chef, humanitarian and founder of World Central Kitchen will share his thoughts on how food and the foodservice industry can be a force for good.

The 5th annual John Bil Oyster Shucking Competition

Tuesday, April 8 — 3–5 p.m. | Bar & Beverage Stage

This competition, named after the restaurateur, fishmonger and co-owner of Honest Weight, promises a shucking good time. Contestants must successfully shuck 12 choice P.E.I. oysters in the fastest time and in a presentable manner (can I get a shell, no?) to be crowned the fastest shucker at the 5th annual competition.

Beyond the Rail Cocktail Competition

Wednesday, April 9 —11 a.m.-1 p.m. | Bar & Beverage Stage

Canada’s top bartenders go shaker to shaker and push the boundaries of creativity, service and skill at the Beyond the Rail Cocktail Competition. Mixologists are challenged to create unique and showstopping cocktails, but twists and turns — like a black box ingredient — promise to keep them on their toes. The bartender who can impress a panel of esteemed judges will go home with $5,000 in prize money.
