In our Cocktail Episode, we shake things up with certified beverage expert Evelyn Chick and make three swoon-worthy cocktails perfect for at-home entertaining.

To coincide with the first ever Drinks Issue of Foodism, we brought our latest episode of In the Kitchen behind the bar to shake things up with certified beverage expert Evelyn Chick. In our Cocktail Episode, Chick shows us how to make two alcoholic and one non-alcoholic cocktail — all perfect for at-home mixing.

The founder of Evelyn Chick Projects started her career in Vancouver, before moving to Toronto to take on the beverage scene here. In 2015, Chick gained international notoriety when she was crowned “Best in the World” at the Global Beefeater MIXLDN championships. She went on to visit 16 cities in a year before settling back down in Toronto.

During the height of the pandemic, Chick launched her business Evelyn Chick Projects, offering cocktail kits, virtual classes, consulting and more. Her creative concoctions range from booze-forward tipples to non-alcoholic serves and even cannabis cocktails. Here, she flexes her mixology skills with three of her own creations.

A believer in supporting local, Chick's Fun Fino Fizz features Dillon's Dry Gin, while her take on the Scofflaw uses Bearface Whisky for a richer taste. Meanwhile the Fennel Fiddler has all the layers of a cocktail, without the alcohol for those who don't want to imbibe but still want all the flavour.

Fun Fino Fizz

Evelyn Chick's Fun Fino Fizz recipe

Serves 1

Preparation time 5 minutes

Ingredients

  • 1 oz Fino Sherry
  • ½ oz Dillon’s Dry Gin 7
  • ¾ oz makrut lime and pineapple gomme syrup
  • 1 oz lime
  • Soda water, to top
  • Makrut lime and dehydrated pineapple, to garnish

Method

  1. Take all ingredients and combine in a shaker tin.
  2. Add ice and shake vigorously for 10–15 seconds.
  3. Strain into a tall collins glass, top with soda and give it a quick stir.
  4. Garnish with makrut lime and dehydrated pineapple.

Fennel Fiddler

Evelyn Chick's Fennel Fiddler recipe

Serves 1

Preparation time 5 minutes

Ingredients

  • 1 ½ oz Seedlip Grove 42
  • ½ oz orange oleo-saccharum
  • ½ oz acidified fennel juice
  • ½ oz honey
  • Ginger kombucha, to top
  • Fennel fronds, to garnish

Method

  1. In a rocks glass, add all ingredients and stir to dilute honey.
  2. Pack with ice, top with ginger kombucha and stir again.
  3. Garnish with fennel fronds.

Scofflaw

Evelyn Chick's Scofflaw recipe

Serves 1

Preparation time 5 minutes

Ingredients

  • 1 ½ oz whisky
  • ½ oz dry vermouth
  • ¾ oz House Spiced Grenadine
  • 1 oz lemon
  • 2 dashes Bittered Sling Moondog Bitters
  • Orange peel, to garnish

Method

  1. Combine all ingredients in a shaker tin.
  2. Add ice and shake vigorously for 10-15 seconds.
  3. Strain into a coupe glass.
  4. Roll the orange peel into a rose, skewer it and use as garnish.
