Herbed Potato Rösti
Similar to hash browns, this traditional Swiss dish can be made as an appetizer, for breakfast or as a side dish with dinner.
Shred unpeeled potatoes using a food processor or box grater. Squeeze all the water out of the potatoes. Toss with rosemary, pepper, salt and half each of the parsley and green onion until well combined. Divide the mixture into four equal portions.
Heat half the butter in a large, non-stick skillet set over high heat. When the butter foams, add the potato mixture and, using a silicone spatula, form into 4 individual disks of equal thickness. Reduce the heat to medium high and cook for 4 to 5 minutes or until underside is set and a golden crust forms.
Add remaining butter and gently turn rösti; cook for an additional 5 minutes or until rösti are golden brown and bubbles are actively forming in the centre of each disk. Drain on paper towel.
Meanwhile, combine sour cream with remaining parsley, green onion and mustard. Serve with warm rösti.
Notes:
Add smoked salmon to the plate for a traditional accompaniment.

In a large mixing bowl, combine the softened Gay Lea Salted Butter, Gay Lea Full Fat Sour Cream, clear vanilla extract and icing sugar. Using an electric mixer, cream the mixture on medium speed for 4¬–5 minutes until light and fluffy.
Gradually add the all-purpose flour to the creamed mixture. Mix until the dough is well combined and has a thick but non-sticky consistency.
Lightly flour your work surface and roll out the dough to your desired thickness (typically about ¼ inch). Use cookie cutters to cut out shapes resembling people.
Preheat your oven to 300 F. Place the cutouts on a parchment-lined baking sheet. Bake for approximately 14 minutes or until the edges are lightly golden. Allow them to cool completely on a wire rack.
Royal Icing
In a mixing bowl, whisk together the meringue powder, Gay Lea Real Whipped Cream and warm water until the mixture is well combined. Stir in the clear corn syrup and clear vanilla extract, mixing until smooth.
Gradually add the icing sugar, mixing on low speed until fully combined. Increase speed and beat for an additional 3–5 minutes until the icing holds stiff peaks.
Once your shortbread people are completely cooled, use the royal icing to flood and decorate them as desired.

Turkey, Cranberry & Cheddar Waffle Sandwich
Start the day with a hearty and satisfying waffle sandwich loaded with turkey, aged cheddar and tangy cranberry sauce.
Lay four waffles on work surface; brush with mustard and sprinkle with half of the cheese. Top with turkey, cranberry sauce and remaining cheese. Cap with remaining waffles.
Melt half of the butter in a large skillet set over medium-high heat. Toast sandwiches, in batches, for 2 to 3 minutes per side or until golden brown and cheese is melted, adding butter as needed. Serve immediately.
Notes:
Substitute honey mustard or ranch dressing for dijon mustard if desired.
Gay Lea Share Joy Cake
Gather 'round and Share Joy! This cake is made for sweet moments with friends and family. The joyful blend of Gay Lea's famous butter, sour cream and whipped cream makes it perfectly moist and irresistibly light! All that’s left to do is set the table, serve and share!
Preheat oven to 350 F and adjust rack so it’s in the middle of the oven. Grease and line a 9-inch round cake pan with parchment paper.
In the bowl of stand mixer (or by hand if you prefer), cream together the butter and sugar for about 5 minutes on medium speed, until mixture is pale and fluffy. Scrape down the sides of the bowl and add 1 egg. Mix well.
Scrape down the sides of the bowl and repeat with the remaining 2 eggs.
In a separate bowl, mix the flour, baking soda, baking powder and salt.
In the bowl with the butter, add in the sour cream and vanilla extract. Mix until well combined, ensuring to scrape the bottom and sides of the bowl.
Once all mixed, add to the dry ingredients, fold in whipped cream, and gently fold all together just until no more dry ingredients can be seen. Careful not to overmix.
Pour into prepared baking pan and bake at 350 F for 30–40 minutes or until a toothpick inserted into the centre of the cake comes out clean.
Remove from oven and let cake cool for at least 10 minutes before transferring to a cooling rack. Chill completely before frosting.
