Fall has arrived and with it an abundance of cocktail inspiration. We share two delicious cocktail recipes from Dillon's, featuring one which uses their brand-new Pear Gin.

With summer in the rearview mirror, now is the perfect time to dust off your bar cart and start getting creative with cocktails indoors. If, like us, you're tired of your usual repertoire, we've got some fall cocktail recipes that will help you fall back in love with hosting season — and bartending. 

Dillon's Small Batch Distillers, located in Beamsville, Niagara, has long been our go-to when it comes to populating our bar rail, with everything from Rye Whisky and Vodka to Peach Brandy and Orange Liqueur in their roster. Now, just in time for fall, the craft distillery has added yet another spirit to its arsenal: Pear Gin. Made using freshly pressed Bartlett pear juice and their Dry Gin 7 as the base spirit, it's a gin that's bursting with terroir and incredibly versatile when it comes to updating your cocktail game.

We're sharing two delicious fall cocktail recipes from Dillon's so you can wow your guests (or just yourself) at your next gathering. The first is a Fall Cinnamon Spice Mule, which shakes up classic Dillon's Vodka with the distillery's Ginger Bitters and Orange Liqueur for a spicy hug in a mug. Plus, there's a refreshing riff on the classic Tom Collins featuring Dillon's brand-new Pear Gin. The Pear Collins combines Dillon's bitters and syrups, plus a sprig of thyme and rosemary, for a fall sipper that's guaranteed to make it onto your hitlist.

Pear Collins

Makes 1

Preparation time 5 minutes

Ingredients

  • 1½ oz Dillon’s Pear Gin
  • 1 oz Dillon’s Rosemary & Clove Syrup
  • 1 oz fresh lemon juice
  • 2-3 dashes Dillon’s Pear Bitters
  • 2-3 oz soda water
  • Pear slices, for garnish
  • Fresh thyme or rosemary, for garnish

Method

  1. Combine the gin, syrup, lemon juice and bitters into a cocktail shaker.
  2. Add ice and shake for 10-15 seconds.
  3. Strain into a collins glass with fresh ice. Top with soda water and garnish.

Fall cinnamon spice mule

Makes 1

Preparation time 5 minutes

Cooking time 5 minutes

Ingredients

Cinnamon syrup

  • ½ cup sugar
  • ½ cup water
  • 2 cinnamon sticks

Cocktail

  • 1½ oz Dillon’s Vodka
  • ½ oz Dillon’s Orange Liqueur
  • ½ oz cinnamon syrup
  • 2 dashes Dillon’s Ginger Bitters
  • 3–4 oz ginger beer
  • Cinnamon stick, for garnish

Method

Cinnamon syrup

  1. Combine ½ cup sugar, ½ cup water and 2 cinnamon sticks into a small pan. Heat until the sugar has dissolved. Let cool and steep.
  2. Once cooled, transfer to an airtight container and store in the refrigerator for up to two weeks.


Cocktail

  1. Combine the vodka, orange liqueur, syrup and bitters into a cocktail shaker.
  2. Add ice and shake for 10-15 seconds.
  3. Strain into a copper mule mug with fresh ice, add ginger beer and stir to combine. Garnish and enjoy!
