Ingredients

  • 1 pkg Gardein Crispy Chick’n Mandarin Orange nuggets
  • 2 Tbsp canola oil
  • 1 cup diced yellow zucchini
  • 1 cup diced green zucchini
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 2 tsp minced fresh ginger
  • 1 cup cooked white or brown rice, cooled
  • 4 tsp soy sauce
  • 2 green onions, thinly sliced
  • 1 tsp toasted sesame seeds

Method

  1. Prepare Gardein Crispy Chick’n Mandarin Orange nuggets according to package directions; toss nuggets in sauce.
  2. Meanwhile, heat oil in wok or skillet set over high heat; cook yellow zucchini, green zucchini and onion for 2 to 3 minutes or until starting to brown in spots. Stir in garlic and ginger; cook for 1 to 2 minutes or until well coated.
  3. Stir in rice; cook for 3 to 5 minutes or until rice is heated through. Stir in soy sauce.
  4. Divide between 2 bowls and top with Gardein Crispy Chick’n Mandarin Orange nuggets. Sprinkle with green onions and sesame seeds.
