For the freshest craft beer in town, look beyond the Beer Store or LCBO and head straight to the source. Toronto is home to over 20 excellent breweries where you can buy bottles direct from the place where it was made.
One of our favourites, and definitely one of the city's most innovative, is Halo Brewery which just celebrated their one year anniversary in May. To mark the occasion, they've created their first-ever brew using the elusive Brettanomyces yeast – a sour ale that's appropriately named Three Sixty.
Working with Escarpment Labs, a Guelph-based laboratory that helps brewers isolate and culture yeasts for making beer, the Halo brewers selected four strains of Brett yeast from their house culture to give Three Sixty its complex, fruity character.
A blend of hops (Centennial, Citra, Amarillo and Cascade) helps amp up the beer’s fruity aromas but they're added later in the process to add flavour without as much bitterness. It’s a delightfully refreshing and patio-friendly brew but there's only a limited quantity available so pick up a bottle while supplies last.
