OK, 'moon matcha' we see you, all over Instagram. If you haven't sipped the coveted Starbuck's TikTok drink yet (P.S. it's just an iced matcha latte with two pumps chai and very good PR) why not try making your own matcha tea at home? 

Christina Veira, partner and general manager at Toronto's Bar Mordecai, has a vanilla matcha milk tea recipe with multi-colour tapioca pearls (available at most Asian food stores) that we think deserves to go viral. It's adorable, vegan and delicious — not to mention super easy to make yourself.

"I love to use a lot of herbs, spices and teas. Tea can capture these fresh flavours, but also add a dimension that comes from the ageing (and sometimes) fermentation process,” says Veira. "Plus, they’re shelf stable, so you can add all these layers of flavour that are almost captured in time."

This matcha tea is as playful as Bar Mordecai itself, which was only six weeks old when COVID hit, forcing the Wes Anderson-inspired space to close its doors. It’s been able to stay in business thanks to a brief-but-beautiful patio and by selling bottled cocktails, cold brew teas and snacks.

Ingredients

  • 1 Tbsp vanilla matcha
  • 1 Tbsp white sugar
  • 2 oz warm water
  • 2 oz oat milk
  • 2 Tbsp cooked, multi-colour tapioca pearls

Method

For the tapioca pearls

  1. Add tapioca pearls to a pot of boiling water, stirring lightly.
  2. Once tapioca floats to the top, cover for 15 minutes, stirring occasionally. 
  3. Let cool for 15 minutes.
  4. Strain pearls and gently run cool water over them.
  5. Tip: putting sugar or simple syrup over pearls prevents sticking.

For the matcha tea

  1. Combine matcha, sugar and water in a bowl, then froth with a handheld frother.
  2. Add oat milk and continue to froth.
  3. In a chilled collins glass, add your cooked tapioca pearls.
  4. Add your oat milk matcha mixture to a shaker tin with ice and give it a quick shake to chill.
  5. Strain into the glass over your pearls.
